食品加工 Food Processing

食品加工範圍廣泛,從食品的貯存及烹調法,到植物和肉類的營養添加及保存法,都一一涵蓋在內。食品加工由來已久,目的就是要解決食物供求差距的問題。最早的加工方法,不外是發酵、曬乾、鹽醃,而在若干情況下,加熱烤熟也算是一種加工方法。

Food processing extends from the nutrients (and protective measures) we apply to the plants and animals that we eat, right through to the method of storage and cooking prior to consumption. Food processing has been with us almost since time began in order to overcome the disparity between supply and demand. Some of the earliest methods of processing involved fermentation, sun drying, preserving with salt and, in some cases cooking itself.
